introduction of refrigerated rail cars, America’s appetite
for beef has continued to grow.
However, the way that meat reaches the consumer continues to
change. Consolidation of agricultural and meat
manufacturing industries has made the knowledgeable butcher
scarce. Many consumers now only have access to pre-packaged
cuts of meat.
At Keystone Meats, our butchers still fabricate retail cuts
of steaks, roasts, and ground meat from whole carcasses,
sides, and primal cuts harvested at our own USDA
manufacturing facility. Our skilled butchers can help you
identify the best cuts for flavor and tenderness, and we can
custom cut for your individual taste.

Beef Tenderloin
Beef tenderloin, or filet, is the most tender cut of
beef. The tenderloin is located along both sides of
the backbone under the short loin and sirloin. It
is known for its fine texture and mild flavor, and
can be easily prepared in many different ways.

New York Strip Steak
The New York Strip steak is a steak house favorite.
Strips come from the short loin section of the
beef. This cut is the same as the loin side of the
T-bone and Porterhouse steaks. New York Strip steak
is most commonly cut 1.0 – 1.5 inches thick and
grilled over high heat. |

Ribeye
The Ribeye is famous for rich juicy flavor. Coming
from the rib section of the beef, this cut normally
has more marbling than steaks from the loin. The
Ribeye is the part of the beef that is inspected to
determine the grade of the entire carcass – the more
marbling the higher the grade! Ribeyes are an
excellent choice for grilling or broiling. |

Our Chopped Steaks are very lean 6 oz fresh
patties. Chopped Steaks come from the same beef
that our steaks come from. |
